
MJ’s Baked Salmon in a Toaster Oven
INGREDIENTS:
Single serving frozen salmon
EV Olive Oil
Apple Cider vinegar
Slice of fresh lime
Old bay
Garlic & Parsley Salt
Black Pepper
Cayenne Pepper
Butter
Honey
Preparation and Cooking Processes
- Thaw sealed frozen salmon serving in a pan of cold water for 20 minutes
- Preheat Toaster Oven to 400 degrees F
- Form a “pan” out of aluminum foil by folding up all 4 sides
- Pour a bed of olive oil into the foil pan
- Pour a splash of vinegar into the oil and mix gently with a fork
- Place the salmon – skin side down on the oil
- Apply generous amounts of Old Bay, garlic salt, black pepper
- Squeeze juice of lime across the salmon – leave lime slices soaking in oil base
- Apply a dash of cayenne pepper
- Cut slices of butter and place on top of salmon evenly
- Lightly drizzle honey over top of salmon
- Carefully transfer the “pan” onto the toaster oven tray
- Bake in toaster oven for 10-15 minutes (mine was ready after 10 minutes)
- Salmon is ready when it flakes apart with a fork – Do NOT OVER COOK!
- Turn off the heat, but leave in oven for next step
- Microwave a plate with leftover garlic mashed potatoes and broccoli
- Carefully transfer the salmon onto the plate and pour the oil mixture on top to preference
- Garnish with the lime slices to take a nice picture
- Enjoy your delectable 30-minute meal…
